The Guía AD-Gourmet is the second pillar of the Argentina to the World ecosystem. It is the first free, commission-less professional curation of Argentine gastronomy and hospitality put at the service of the world, with explicit focus on honoring the trade rather than competing with the commercial logics of the ranking industry.
The Guide documents 500 chefs and 500 hotels selected federally. Selection has no cost for the curated, publishes no advertising, does not charge for positioning and does not operate under a logic of negotiable stars. It is an editorial guide in the classical sense of the term — like the heritage guides of 20th-century Europe before the total commercialization of the field.
The human composition of the Guide translates the Only ADD manifesto with observable proportions: 60% women in the linked productive base, 40% in the professional chef selection, and curated presence of young cooks from indigenous peoples from all regions. Diversity as practice, not as discourse.
One More Plate is the solidarity mechanism embedded in the Guía AD-Gourmet.
